Terry Recommends: Family-Friendly Veggie Pasta

It may not be Irish for St. Patrick’s Day, but this roasted veggie pasta is a lifesaver no matter the meal! Here’s what you need:

Gather up all the vegetables in your fridge – whether it’s peppers, onions, green beans, peas – whatever veggies your kids enjoy or prefer to eat. Choose a pasta they love too, put it in the pot and cook it al dente. Then throw it all into a big bake pan with your chopped veggies, drizzle olive oil, generous amount of salt and pepper, and pop it in the oven! It’s such a simple, easy, healthy meal that can be devoured cold or hot. Don’t forget the cheese!

    I love using up whatever veggies there are in the fridge for a dish like this — you can never go wrong. 🙂
